Step by Step Method

Step 1

Place a large pot of salted water on to boil.

Step 2

In a heavy skillet, cook the sausage with onion until lightly browned, breaking up the sausage meat with two forks as it cooks. Add garlic and cook 2 minutes.

Step 3

Cook the pasta until al dente, then drain the pasta, reserving 1 cup of the pasta water.

Step 4

Return the pasta to the pot and add the olive oil and sausage over medium heat stirring to mix.

Step 5

Add the ricotta, and enough of the pasta water to loosen the ricotta so it coats the pasta and remove from the heat (you may not use the full 1 cup of reserved water).

Step 6

Season with salt and pepper and stir in the 1/3 cup of Parmesan cheese. Serve the pasta in individual bowls with more Parmesan cheese at the table.

Five stars all around - it's a five for super easy to make and five for a recipe that looks and tastes like you spent hours in the kitchen! Love when easy tastes this good. Made as posted - no changes needed for this little gem that will be seeing to repeats at our house.
