Ingredients

The ingredients are:
  • 1 pound sweet or spicy Italian sausage links, remove all the casings (we like spicy)
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound dry rotini pasta, ziti or penne will do alsoi
  • 2 tablespoons oil, doesn't matter which kind of oil
  • 1 pound ricotta cheese
  • Salt & pepper
  • 1/3 cup Parmesan cheese, more to use at the table

How to Make

  • Step 1: Place a large pot of salted water on to boil.

  • Step 2: In a heavy skillet, cook the sausage with onion until lightly browned, breaking up the sausage meat with two forks as it cooks. Add garlic and cook 2 minutes.

  • Step 3: Cook the pasta until al dente, then drain the pasta, reserving 1 cup of the pasta water.

  • Step 4: Return the pasta to the pot and add the olive oil and sausage over medium heat stirring to mix.

  • Step 5: Add the ricotta, and enough of the pasta water to loosen the ricotta so it coats the pasta and remove from the heat (you may not use the full 1 cup of reserved water).

  • Step 6: Season with salt and pepper and stir in the 1/3 cup of Parmesan cheese. Serve the pasta in individual bowls with more Parmesan cheese at the table.
