Shape beef into two patties.
Season with salt and pepper to taste.
Cook to desired doneness on grill or stovetop.
Cook bacon and sauté onion in butter in same sauté pan.
Place Sharp Cheddar Cheese and Pepper Jack Cheese on one patty at different angles on the flipped patty.
Top with one strip bacon criss cross and some onions on top of cheese let melt together
And second flipped patty
Place Colby Jack Cheese and Swiss Cheese on top of the second patty.
Top with remaining bacon and onions same way let melt
And place top bun On the swiss cheese patty
And place 1st patty on bottom
