Sarasota's BBQ Chicken Pizza

"A nice twist on pizza; and, a great way to use up leftover chicken. I happened to use a premade uncooked crust for this; but, you can always make your own. Just use your favorite recipe."

Step by Step Method

Step 1

BBQ Sauce ... Mix the jalapeno and BBQ sauce together. 1 1/2-2 tablespoons will be used to coat the chicken; the remaining sauce will be spread on the pizza crust. Note: you could always use a spicy BBQ sauce, and no jalapeno. However, I prefer a basic sauce, and add my own jalapenos.

Step 2

Chicken ... This is perfect to use leftover rotisserie chicken. Add the chicken to a small bowl, and toss with sauce to lightly coat the chicken. Remember, the rest is spread on the crust - just lightly coat.

Step 3

Pizza Dough ... Roll out your dough (round, square, or oblong), then transfer to a pizza stone or baking/sheet pan. I like to lightly oil the sheet pan; but, for the pizza stone, I usually just add a little corn meal.

Step 4

Pizza ... Top the pizza with the remaining BBQ sauce; and, spread evenly over the top, leaving a small border around the edge. Then, top with the mozzarella. I like to just break apart the mozzarella in small pieces; but, you can cut in small cubes as well. Add the chicken which you tossed with the BBQ sauce, bacon, red peppers, and onions. Finish the pizza with the pecorino romano or parmesan cheese.

Step 5

Bake ... In a 450 degree pre-heated oven, middle shelf, for 10-15 minutes, until the crust is golden brown. Remember to pre-heat your pizza stone, if that if how you are cooking your pizza.

Step 6

Finish, Serve, and ENJOY! ... Garnish the pizza with cilantro - slice and dig in.
