Step 1
Heat wok over high heat until hot and add the chilli and garlic oil and swirl to coat and then add garlic, ginger and pork and stir-fry for 2 to 3 minutes or until pork just changes colour.
Step 2
Add soy sauce and oyster sauce and add shallots, 2 teaspoons of lime juice and sesame oil to wok and stir-fry for 3 minutes or until heated through and then stir in beansprouts.
Step 3
Spoon pork mixture into lettuce leaves and sprinkle with coriander, peanuts and corn kernels and serve.
