Ingredients

The ingredients are:
  • 50 ml olive oil, chilli and garlic oil specified
  • 2 garlic cloves, minced
  • 2 cm piece ginger, finely grated
  • 500 grams pork mince, lean
  • 1 tablespoon soy sauce
  • 2 tablespoons oyster sauce
  • 3 shallots, thinly sliced
  • 1/2 lime, juiced
  • 1 teaspoon sesame oil
  • 1 cup beansprouts, trimmed
  • 200 grams baby cos lettuce
  • 1/2 cup coriander leaves, a handful of freshly picked leaves specified
  • 1/4 cup peanuts, toasted and chopped
  • 50 grams corn kernels

How to Make

  • Step 1: Heat wok over high heat until hot and add the chilli and garlic oil and swirl to coat and then add garlic, ginger and pork and stir-fry for 2 to 3 minutes or until pork just changes colour.

  • Step 2: Add soy sauce and oyster sauce and add shallots, 2 teaspoons of lime juice and sesame oil to wok and stir-fry for 3 minutes or until heated through and then stir in beansprouts.

  • Step 3: Spoon pork mixture into lettuce leaves and sprinkle with coriander, peanuts and corn kernels and serve.
