Step by Step Method

Step 1

Cut the chicken into 1/2 inch dice. In a medium bowl, combine the chicken with the olive oil and the garlic. Let sit for 10 minutes.

Step 2

Meanwhile, start the fettuccine cooking. When done, drain and set aside.

Step 3

Heat a large, heavy skillet. Add the butter and stir until melted. Add the chicken and cook until browned on all sides, stirring to prevent the garlic from burning.

Step 4

Add the bell pepper, onion and jalapeno. Cook until the veggies have softened.

Step 5

Add the soy sauce, tequila, and chicken broth. Cook until most of the liquid has evaporated. Add the cream, just TWO tablespoons of the cilantro, and the lime juice. Cook until the sauce thickens.

Step 6

Add the cooked fettuccine to the sauce. Toss until well coated and heated through. Divide pasta into 2 large pasta bowls and top with the remaining cilantro. Serve immediately.
