Step by Step Method
Step 1
Heat the oil in a stock pot over medium heat.
Step 2
And the onion, bell pepper, garlic and dry seasonings.

Cook down for 8 minutes, or until the veggies are softened, stirring frequently.

Pour in the broth, salsa verde and lentils.
Step 5
Bring to a boil, lower the heat and simmer for 30 minutes or until lentils are soft but not mushy adding water as needed.
Step 6
Add the cilantro & lime juice, seasoning to taste.
