  • 2 tablespoons oil
  • 1 cup yellow onion, diced
  • 1 cup green bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 6 cups vegetable broth
  • 12 ounces salsa verde
  • 7 ounces lentils, dry
  • 2 tablespoons cilantro, minced
  • 1 tablespoon lime juice

How to Make

  • Step 1: Heat the oil in a stock pot over medium heat.

  • Step 2: And the onion, bell pepper, garlic and dry seasonings.

  • Step 3: Cook down for 8 minutes, or until the veggies are softened, stirring frequently.

  • Step 4: Pour in the broth, salsa verde and lentils.

  • Step 5: Bring to a boil, lower the heat and simmer for 30 minutes or until lentils are soft but not mushy adding water as needed.

  • Step 6: Add the cilantro & lime juice, seasoning to taste.
