Step 1

Combine mashed potato, salmon, green onion, egg and first lot of breadcrumbs

Step 2

And mix well.

Step 3

Form into 6 or 8 patties (depends on how large you like them), if you find the mix is breaking up refrigerate for 15 minutes and then form the patties.

Step 4

In a shallow bowl put the flour, then in another bowl lightly beat the egg and milk and in a 3rd put the breadcrumbs.

Step 5

Coat a pattie with flour and then dip in the egg mix and then into the breadcrumbs and then place pattie on baking paper lined tray and repeat till all patties are done and then refrigerate for 30 minutes.

Step 6

Put enough oil in a frypan to cover the base and eat to medium high and cook for 5 minutes or until golden and then flip and cook other side.

Step 7

Serve with a salad or make into a burger.

These salmon patties hold together better than any I've ever tried. They fried perfectly with none breaking or cracking. I will use this method again. I do think the seasonings could be varied according to personal tastes. This time I only added Mrs. Dash and pepper.
