Step by Step Method
Step 1
Saute onions and carrots in butter in large stock pot until opaque, season lightly.
Step 2
Add potatoes, bay leaf, parsley and broth.
Step 3
Simmer for 30 minutes.
Step 4
Mix slurry and add to soup.
Step 5
Cook until thickened.
Step 6
Meanwhile, saute mushrooms in butter until browned, season lightly.
Step 7
When soup is cooked, add to soup and season to taste.
Step 8
Remove bay leaf.
