"From Everyday Food/Martha Stewart. Sugar pumpkins are small pumpkins used for cooking and baking and have a much superior flavor than that of the big pumpkins you would choose for jack-a-lanterns. They are usually about the size of a cantaloupe. This recipe will have a flavor like that of roasted butternut squash, as pumpkin is a winter squash and similar in taste to other hard squash. This recipe doesn't add sweetener but should get a nicely natural sweetness when the pumpkin caramelizes towards the end of cooking, so it shouldn't really be necessary. I haven't done this recipe in particular yet but it is quite like other recipes I have tried that roast pumpkin. I'll post a photo when I do this one- it will be a few months before pumpkin starts coming to the market."

Step by Step Method

Step 1

Preheat oven to 450F.

Step 2

Place cubed pumpkin, shallots, and sage in a mixing bowl and toss with the oil. Then season with S&P and toss again.

Step 3

Spread the pumpkin out in a single layer on a baking sheet, giving it plenty of room (2 baking sheets is recommended); I like to line my baking sheets with nonstick foil to make turning the pumpkin easier.

Step 4

Roast it about 30-35 minutes, turning the pumkpin pieces over after about 15 minutes; it is also a good idea to switch the positions of the two baking sheets to allow it to roast evenly.

Step 5

Continue roasting until the pumpkin darkens and caramelizes but is not burnt; this may take a few more or less minutes depending on your oven.

I scaled back for 2 serves and used a 1/4 of a Kent pumpkin which weighed 2lb but for us I would halve this again as I had heaps left over which I will mash and use for another meal. We loved the flavours though the DH didn't have any of the shallots (which I left the same as for a full recipe) but he enjoyed the pumpkin and actually had more than he usually would, thank you Sue Lau made for Pick Me tag game.
