"I clipped this recipe from Cooking Light years ago, but then it got lost in my recipe box. Now that I'm a big fan of roasted vegetables, I really want to try this."

Step 1

Preheat oven to 450 degrees.

Combine mushrooms, shallots, garlic and green beans on a jelly roll pan coated with cooking spray.

Drizzle with oil, then sprinkle with thyme and pepper. Toss well to coat.

Bake for 30 minutes or until beans are lightly browned.

Sprinkle with salt, toss to combine.
