"Yet another asparagus recipe. This one I found in the Food Network magazine. They say to roast the asparagus in a 450 oven for 15 minutes but I like my asparagus hot through but crisp so I cut the time back to 8 - 10 minutes {depending on the thickness). I like the flavour of toasted pine nuts with the asparagus"

Step by Step Method

Step 1

Pre-heat oven to 450f

Step 2

Place the prepared asparagus on a baking tray, lightly spray with olive oil, and season with salt and pepper

Step 3

Roast for 8 - 10 minutes

Step 4

Sprinkle with lemon juice, pine nuts, parsley & lemon zest - serve
