Step by Step Method

Step 1

Preheat oven to 350f.

Step 2

Snap the asparagus stem to remove the woody parts.

Step 3

Place the asparagus in a 8"x8" glass baking dish.

Step 4

Melt the butter in a small saucepan.

Step 5

Add the remaining ingredients and stir.

Step 6

Pour over the asparagus.

Step 7

Cover tightly with foil and marinade for 30 minutes.

Step 8

Place in oven and bake for 15 - 20 minutes.

Step 9

Remove from oven and serve warm.

We thoroughly enjoyed this wonderful change of pace! The two of us ate the whole thing. I baked it in my counter top oven which I put out on the deck when it is too hot to use the big oven. It took a few more minutes than stated, but well worth the wait! I do have the Rotel tomatoes with green chilies but not the lime pepper, used lemon pepper. I have since found a recipe for it and will be making it for the next time I make this repeatable recipe. Thank you for sharing Shadows! Made for Billboard Recipe Tag.

Delicious. Oven time of 15 minutes was perfect the asparagus still had crunch. I had to improvise - Rotel tomatoes are not avalable here nor could I find lime pepper. So I used a tin of diced tomatoes with chilies and lime juice. Excellent flavour. This recipe is tucked away to make again.

mmm an easy delicious way to use asparagus! Where did you find lime pepper seasoning? hunted everywhere, so i used fresh lime juice and added some pepper to it. Also subed stewed tomatos and added fresh jalepeno to them. Turned out delicious! we loved the tex mex flavour and i will be making this again.
