Step by Step Method

Step 1

Snap off tough ends of asparagus.

Step 2

Place asparagus spears and water in a shallow microwave dish.

Step 3

Cover and microwave at HIGH 2 to 4 minutes (I just steam mine) or until asparagus is crisp-tender; drain.

Step 4

Return to dish.

Step 5

Combine vinegar and next 3 ingredients in a small bowl; stir with a whisk until mixture is blended.

Step 6

Pour vinegar mixture over asparagus, turning asparagus to coat.

Step 7

Cover and marinate in refrigerator at least 2 hours, tuning asparagus occasionally.

These are really good! I never thought of cold asparagus before but will have it this way often. Thanks for sharing!

I made this recipe exactly as written. We enjoyed this recipe, but next time I will cut back on the ginger, as the ginger seemed to overtake the flavours and tended to be slightly bitter. The asparagus still had a slight crunch to them, which I really loved. Great served as a side to our B.B.Q.
