Step 1
Preheat oven to 400f degrees.
Step 2
Peel and quarter the potatoes, then cut the quarters into about 5 chunks.
Step 3
In a medium bowl, mix the olive oil, garlic salt, pepper and basil; add the potato chunks and stir to coat well. Dump the potatoes either into a shallow casserole to hold them in a single layer or use a foil lined cookie sheet.
Step 4
Roast for 45 to 60 minutes or until crisped brown on the outside and fork tender.
Step 5
Stir and turn the potatoes every 20 minutes to brown on all sides.
