  • 4 medium roasting potatoes
  • 1 to 2 tablespoons olive oil
  • 1 teaspoon garlic salt
  • 1 1/2 teaspoons pepper, freshly ground
  • 1 tablespoon dried basil (or oregeno or herb or your choice)

How to Make

  • Step 1: Preheat oven to 400f degrees.

  • Step 2: Peel and quarter the potatoes, then cut the quarters into about 5 chunks.

  • Step 3: In a medium bowl, mix the olive oil, garlic salt, pepper and basil; add the potato chunks and stir to coat well. Dump the potatoes either into a shallow casserole to hold them in a single layer or use a foil lined cookie sheet.

  • Step 4: Roast for 45 to 60 minutes or until crisped brown on the outside and fork tender.

  • Step 5: Stir and turn the potatoes every 20 minutes to brown on all sides.
