Step 1

Pre-heat the oven 375F.

Step 2

Crush the fennel seeds..Place them, crushed, in a small bowl with the minced garlic, thyme, oil, dry mustard, salt & pepper. Mix well to form a paste..Rub all over the roast

Step 3

Place the roast on a rack, centre oven 375F.

Step 4

Roast for 2 Hours or until the inside temperature is 160F.

Step 5

Remove from oven, tent with foil.

Step 6

Rest the roast for 10 minutes before slicing.

We love pork so this caught my eye as soon as it was posted. What a lovely combination of flavors! DH commented over and over just how much he enjoyed this roast! We served this with Steamed Potatoes #22000 and Brussels Sprouts & Mushrooms with Rosemary #17286 for wonderful Zazz dinner! We'll keep this recipe handy - thanks Bergy!
