Step 1: Pre-heat the oven 375F.
Step 2: Crush the fennel seeds..Place them, crushed, in a small bowl with the minced garlic, thyme, oil, dry mustard, salt & pepper. Mix well to form a paste..Rub all over the roast
Step 3: Place the roast on a rack, centre oven 375F.
Step 4: Roast for 2 Hours or until the inside temperature is 160F.
Step 5: Remove from oven, tent with foil.
Step 6: Rest the roast for 10 minutes before slicing.
