The ingredients are:
  • 1 center-cut (2 1/4 pound) pork loin roast
  • 1 teaspoon fennel seeds
  • 6 cloves garlic, minced
  • 4 teaspoon chopped fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon oil (vegetable oil)
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Pre-heat the oven 375F.

  • Step 2: Crush the fennel seeds..Place them, crushed, in a small bowl with the minced garlic, thyme, oil, dry mustard, salt & pepper. Mix well to form a paste..Rub all over the roast

  • Step 3: Place the roast on a rack, centre oven 375F.

  • Step 4: Roast for 2 Hours or until the inside temperature is 160F.

  • Step 5: Remove from oven, tent with foil.

  • Step 6: Rest the roast for 10 minutes before slicing.
