Step by Step Method

Step 1

Cook rice noodles as per package directions.

Step 2

In the meantime, drizzle the olive oil in a sauce pot and bring to medium-high heat.

Add garlic and cook until fragrant.

Pour in the tomatoes and add the basil and sugar; reduce heat to medium-low and simmer for about 5 minutes.

Step 5

Drain pasta and top with sauce.

This is fast and easy to put together. Bright flavour and light on the tummy. I used fresh basil at the end of cooking and added hot pepper flakes for a kick. Finished it with a drizzle of basil oil and a wee bit of cheese. Thanks for sharing Bea! Made for Billboard Recipe Tag.
