"This is a recipe from an Australian butter company "Western Star". Their sauce recipes are always fantastic and this one is no exception. This sauce is fabulous served with steak, roasted eye fillet beef or your favorite type of roast beef, lamb or even duck. Use a full flavored red wine such as merlot or shiraz for a full flavored sauce."

Step by Step Method

Step 1

Place all ingredients except the butter in a saucepan and bring to the boil.

Step 2

Simmer for 10 minutes or until reduced by half

Step 3

Strain the sauce through a fine sieve and return the sauce to the saucepan over low heat; gradually whisk in butter one cube at a time melting each addition before adding more.

Step 4

Serve this rich sauce with roast lamb or beef
