"This recipe is one of our favorites because we love the dressing. It is not necessary to use the type of "lettuce" referenced. Any type will do. I usually just grab a bag of the prepackaged baby spinach or spring mix. Whatever you want. It is the dressing that makes it special. I ALSO throw anything in to this instead of in addition the oranges: goat cheese, macadamia nuts,sliced strawberries, blueberries etc. Most anything that you like works."

Step 1

Mix all dressing ingredients and pour over the salad immediately before serving. If you do it in advance, the lettuce wilts. Dressing is best if it is made well in advance and refrigerated.

So refreshing - we loved it! Tried this with spinach and it was great. Took your advice regarding the salt and used only celery salt. Used a Valencia orange rather than the mandarin oranges but will try them in the future. DH added a few rings of red onion. I noticed that there was no oil listed and found where you had posted at fooddotcom so used the 1/2 cup listed there. This is a salad that we'll enjoy again. Thanks BigDTexas!
