Ingredients

The ingredients are:
  • 1 pound spinach (or re-tipped lettuce)
  • 1 teaspoon grated yellow onion
  • 1 orange, whole (juice of, I usually just use 3 tablespoons of OJ)
  • 2 tablespoons tarragon vinegar
  • 1 tablespoon granulated sugar (or sugar substitute, Splenda)
  • 1/2 cup oil (salad oil)
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1 tablespoon sesame seeds (toasted)
  • 1 can (11 ounce) mandarin oranges (drained, chilled)

How to Make

  • Step 1: Mix all dressing ingredients and pour over the salad immediately before serving. If you do it in advance, the lettuce wilts. Dressing is best if it is made well in advance and refrigerated.
