Step by Step Method

Step 1

In a large saucepan, cook raspberries and water over medium heat 5 minutes. Add lemon juice. Combine sugar and cornstarch; stir into fruit mixture. Bring to a boil; cook and stir 2 minutes or until thickened. Cool.

Preheat oven to 350°. In a large bowl, combine flour, sugar, baking powder and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in eggs, sour cream and vanilla (batter will be stiff

Spread half into a greased 13x9-in. baking dish. Spread raspberry filling over batter; spoon remaining batter over filling. Combine topping ingredients; sprinkle over top.

Bake 40-45 minutes or until golden brown. Combine glaze ingredients; drizzle over warm cake.

This is an amazing dessert. It takes some time, but is worth every minute spent. I had my raspberries from my garden frozen from the summer and this was such a great way to use them. The batter is very stiff, and I recommend greasing the baking dish with cold butter rather than cooking spray. I used the spray, (in a hurry), and I had to chase the dough around quite a bit while trying to spread it out evenly on the bottom layer. I used my food processor to incorporate the butter with the flour and other ingredients. I believe this made the batter kind of pastry-like. And OH! The end result is almost like a flaky bottom pastry with a lovely cakey-pastry top. This is a truly company-worthy recipe. I used a cream cheese glaze at hubby's request. Fabulous dessert! This cake was delicious. We had some raspberries to be used up . This was definitely the best recipe to use. We loved all the parts of this recipe and will definitely make again. The directions didn't seem very complete or clear.
