Step by Step Method

Step 1

Using a food processor, add the radishes and vinegar to the bowl and then pulse until chopped (10-15 pulses). Let stand for 10 minutes.

Step 2

Transfer mixture to a plated which has been lined with three layers of paper towels. Spread radishes into an even layer and then top with another layer of paper towels and press. Let stand for 5 minutes.

Step 3

In a bowl combine the butter, 1 (or 2) teaspoons horseradish and salt, stirring until combined. Season with salt (using up to 1 teaspoon of salt depending on taste). The amount of horseradish and salt depends on your taste.
