"As the recipe title states, this is a quick and easy recipe I make quite often when I have leftover roast beef. I use my homemade beef broth recipe http://www.recipezazz.com/recipe/homemade-beef-broth for this, but you can use your favourite."

Step by Step Method

Step 1

Heat oil to medium-high heat in a large saucepan; add onions and cook until translucent.

Step 2

Add remaining ingredients and bring to a boil.

Step 3

Reduce heat to medium-low and simmer for half an hour, or until barley is soft and carrots are cooked.

Step 4

Ladle into bowls and serve.

10 Stars! Just like grandma used to make (she also made a chicken version). I used leftover pot roast. Hearty soup and pure comfort food.

This recipe is so simple, filling, and healthy! I had a large piece of cooked beef leftover from a pot roast, and it worked perfectly. Aside from the actual cook time, it's a snap to prepare. I love barley, and I doubled the amount, thus, added more stock. Definitely a keeper, especially when it comes to ease of preparation.

A great quick soup to use cooked leftover beef and easily adapted to use up whatever vegetables you have in your fridge, it did need some salt and pepper. thank you QueenBea we really enjoyed your soup!
