Step by Step Method

Step 1

Sift the flour and bicarbonate of soda into a bowl

In a separate bowl, whisk the toddler milk drink with 150ml water until combined and whisk in the egg, golden syrup and lemon zest.

Add the milk mixture to the flour mixture and stir until well combined and the batter is smooth.

Step 4

Heat a non-stick frying pan over medium heat and brush with melted butter or margarine.

Step 5

Drop level tablespoonfuls of batter into the pan and cook for 2 minutes or until bubbles appear on the surface and the pikelets are golden underneath.

Step 6

Carefully turn an cook for 1 to 2 minutes or until golden and then transfer to a plate and repeat in batches with the remaining batter.
