Ingredients

The ingredients are:
  • 150 grams self-rising flour (1 cup)
  • 1/2 teaspoon bicarbonate of soda
  • Toddler milk drink powder (3 level scoops)
  • 1 large egg
  • 1 tablespoon golden syrup
  • 1 lemon, zested
  • Butter or margarine, to grease

How to Make

  • Step 1: Sift the flour and bicarbonate of soda into a bowl

  • Step 2: In a separate bowl, whisk the toddler milk drink with 150ml water until combined and whisk in the egg, golden syrup and lemon zest.

  • Step 3: Add the milk mixture to the flour mixture and stir until well combined and the batter is smooth.

  • Step 4: Heat a non-stick frying pan over medium heat and brush with melted butter or margarine.

  • Step 5: Drop level tablespoonfuls of batter into the pan and cook for 2 minutes or until bubbles appear on the surface and the pikelets are golden underneath.

  • Step 6: Carefully turn an cook for 1 to 2 minutes or until golden and then transfer to a plate and repeat in batches with the remaining batter.
