"These are just fantastic appetizers. A very old recipe, but still delicious. I use gorgonzola, but if you prefer blue cheese, that is fine - I just prefer the taste of gorgonzola better. These are best served warm, but equally as good at room temperature."

Step by Step Method
Step 1
Dough ... In a heavy, medium size pot, bring the butter and water to a boil. Then, remove from the stove and add the flour and cayenne. Mix well with a spatula or wooden spoon until the batter begins to pull away from the side of the pot.
Step 2
Eggs and Cheese ... Add the beaten eggs one at a time, and mix well to combine; then, add in the cheese and mix once again.
Step 3
Bake ... Preheat the oven to 400 degrees. Add rounded spoonfuls of the dough on a baking sheet lined with parchment paper or foil and buttered. You can skip the parchment or foil, and just butter the pan; but I like the easy clean up. Bake for 30 minutes until they are puffed and golden brown.
