Add onions and bell peppers
Add bay leaf lemon juice, spices and sugar
Bring to a boil stirring constantly
Turn to simmer cook 10 minutes stirring occasionally
Take out bay leaf
In a skillet
Add beaten eggs, season
Cook until almost set add 3 tablespoons sauce with veggies to center of omelet, top with parsley.
Fold over in half.
Plate and top with a little more sauce.
Any left over sauce can be stored in refrigerator.
