President Coolidges Pork Apple Pie 1920
"His mom made this, 10 tiny pieces of salt pork is what it said. She went with Granny Smith (tart) apples and a cast iron skillet, since “deep” is a little vague in 1920's terms. Also, 8 apples took her to the top. Apples were probably smaller back in the early 20th century. I also used cloves because everyone did back then. Some folks added raisins."

Step by Step Method
Step 1
Core, peel, and slice at least 10 tart apples, and put into a deep pie plate (cast iron skillet) without a bottom crust.
Step 2
Sprinkle maple sugar, cloves, nutmeg, cinnamon, flour and a generous pinch of salt over the apples.
Step 3
Mix.
Step 4
Dot with about 10 tiny pieces of salt pork.
Step 5
Cover top with pie crust and bake in hot (400 degree oven) for 10 minutes, reducing heat to medium (350 degrees) for another half hour until browned.
Step 6
Let set to cool a bit before cutting.
