"I came up with this recipe when I had leftover baked potatoes I wanted to use. They turned out so good I make them regularly now. I have written this recipe from scratch, but if you are using leftover potatoes, just make sure you use well reheated potatoes."

Step by Step Method

Step 1

Clean potatoes well and pat dry and cover with foil wrap.

Step 2

Bake in a preheated 400 degree Fahrenheit oven for 1 hour.

Step 3

In the last 10 minutes of bake time cook the butter and flour in a sauce pan for about 2 minutes.

Step 4

Add the broth and bay leaf and simmer until thickened.

Step 5

Remove the foil wrap and split the potato open.

Step 6

Remove and fluff some of the inside of the potatoes.

Step 7

Mix with cheese and re-stuff into the potatoes.

Step 8

Remove bay leaf from gravy and pour over potatoes.

Step 9

Top each potato with 1 tablespoon sour cream, if using.

Wow. So good and very easy. I love cheese curds and will eat gravy on just about anything :). These were great with a hamburger steak and steamed carrots.

Comfort food up to the high heavens. Potatoes don’t get any better than this, so wicked good! We had it along with our steak and it all came out restaurant quality, if not better, for the fraction of the cost. Hubs sprinkled some chopped scallions over the top of his potato, and brother, was it ever a good addition. Thanks so much, Bea, for sharing. Made it “For your Consideration” tag game.

Wowsers how easy was this I used baked potato from day before plunked it air fryer with cheese if you haven't tried the air liners do they are amazing,and some jarred brown gravy ,Mr picky was so happy and this was so easy,going in best of files

Excellent! I used extra curds for extra cheesy creaminess. Gravy just adds to the whole experience of trying these for the first time. Comfort all the way with my meatloaf. I plan to make them again!
