Step by Step Method
Step 1
Peel potatoes and wash under cold water and then pat dry with absorbent paper.
Step 2
Using a 5mm vegetable grater, grate potatoes into long, thin strands and place on a tray lined with absorbent kitchen paper.
Step 3
Heat enough oil in a large wok to deep-fry over a high heat until hot.
Step 4
Add potatoes in four batches and cook for about 2 to 3 minutes, or until golden brown and crisp.
Step 5
Remove with a slotted spoon and drain on absorbent kitchen paper.
Step 6
To make spicy salt, combine all ingredients in a small bowl and mix well.
Step 7
Serve potato straw fries sprinkled with spicy salt.
