Step 1: Peel potatoes and wash under cold water and then pat dry with absorbent paper.
Step 2: Using a 5mm vegetable grater, grate potatoes into long, thin strands and place on a tray lined with absorbent kitchen paper.
Step 3: Heat enough oil in a large wok to deep-fry over a high heat until hot.
Step 4: Add potatoes in four batches and cook for about 2 to 3 minutes, or until golden brown and crisp.
Step 5: Remove with a slotted spoon and drain on absorbent kitchen paper.
Step 6: To make spicy salt, combine all ingredients in a small bowl and mix well.
Step 7: Serve potato straw fries sprinkled with spicy salt.
