Step by Step Method

Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Scrub potatoes and pierce with knife.

Step 3

Place potatoes on parchment lined baking sheet.

Step 4

Bake for 1 hour or until tender when pierced.

Step 5

Remove from oven; increase heat to 450 degrees Fahrenheit.

Step 6

Using a metal spatula, flatten each potato into uneven rounds so flesh squishes out.

Step 7

Drizzle with 1 tablespoon olive oil.

Step 8

Sprinkle with salt.

Step 9

Bake 12 minutes.

Step 10

Flip potatoes and drizzle with remaining oil.

Step 11

Sprinkle with salt.

Step 12

Ake 12 minutes or until outer edges and skins are crispy and golden.

Made for the FF&F What’s on the Menu? Tag Game & it was a pleasure to re-visit this recipe in our new Zazz “home”. DH & I were “spoiling” each other. He was grilling steak & zucchini, while I did an avocado salsa, potatoes & bread. Your already known-to-be easy-fix & yummy potatoes were a perfect pick. I used sml Icelandic potatoes that are in-season now. They’re like fingerling potatoes when cooked (tender & creamy). I did add garlic (a must for me) & as I expected, Siggi loved them. I feel almost like I’m stalking favorite recipes from our prior home. Was happy to find the recipe here & will make it often. :-)

I made mine right in the oven to have with some salmon and Asian Broccoli Slaw. They were delicious with the crispy crunchy outside and the soft tatoes inside. Love cooking them like this and my family gives them 5 ***** all the way!

I made these smashed baked potatoes and they are just great! We loved them with the crispy outsides and yummy insides. I love this new way to make an old favorite of mine, baked potatoes!

I like finding new ways to make potatoes and this is so simple that it was almost too easy. The potatoes come out nice and crunchy on the outside and so flaky on the inside. I could have eaten another whole potato they were so good!
