"One large potato pancake baked in a pie pan, instead of shaping them up and frying them individually. Especially good during the holidays when you'd rather be watching kids and grandkids open presents!"
Place the melted butter in a 9 inch pie plate; set aside.
Rinse the shredded potato; drain well. Press the potato between paper towels to remove the excess moisture.
Combine the potato, egg, salt, and pepper; stir well. Add flour, and stir well.
Firmly press the potato mixture into the pieplate. Sprinkle with cheese and paprika.
Bake at 400° for 35 to 40 minutes or until golden brown.
To serve, cut into wedges.
Garnish with sour cream and chopped green onions, if desired.
