Step 1
Heat a wok over high heat and add oil and swirl to coat wok and add pork and cook, breaking up mince, for a few minutes until pork changes colour.
Step 2
Add green onions, ginger and garlic and stir-fry for two minutes until pork is almost cooked through and then toss through water chestnuts and stir-fry for a minute.
Step 3
Spoon pork mixture into the chilled iceberg lettuce leaves and top each with shredded green onions and coriander leaves and serve.
