"This may be one of the best Ceasar salads you will ever have! For a lower fat option use reduced-fat mayonnaise (not fat-free) and low-fat milk or fat-free half and half, the dressing flavor will intensify with refrigeration time so a little garlic will go a long way, plan ahead there is a 3 hour chilling time for the dressing, cooking time is chilling time"

Step by Step Method

Step 1

In a small food processor process the anchovy fillets and garlic cloves until minced (this must be done firstly in the processor).

Step 2

Add in all remaining dressing ingredients; process for about 20 seconds or until smooth and combined (if you prefer a thinner dressing then add in a small amount of milk or half and half cream then process).

Step 3

Refrigerate the dressing for 3 or more hours before using.

Step 4

When ready to serve mix the prepared dressing with lettuce and croutons, then sprinkle with Parmesan cheese if desired, season with black pepper.

Made as written for the Pick Me Tag Game - I've loved Caesar salads for a lifetime & luckily have had my sister to make them for me. I always thought it was something I'd never be able to do until I saw your recipe & decided to try it on my own. I've never seen anchovies here in Iceland, so I had them brought to me from Switzerland by some recent visitors. The dressing is outstanding, the recipe is an easy fix & I cannot wait to make it for my sister. I just did a taste test w/a sml serving & love it. Then I took a pic so I'd be sure to get 1 B4 my dinner guests make it disappear. Thx for sharing this recipe w/us, Kitten. I guarantee it will have many encores. :-)

I used almost 1/2 tsp of anchovy paste instead of the fillets then followed your directions. This salad is so delicious I could eat it every day. We loved the dressing and I will make it often to have with our main courses. Delicious and then some!

This is the best Caesar salad I have ever had. I could just about drink the salad dressing on its own it is so yummy. It's an excellent idea to make it way ahead of time so it gets real cold and time for the ingredients to mix. I will keep this on hand to use all the time!

Ohmygosh! This makes the best salad. The salad dressing is to die for, and don't be afraid of the anchovies, you don't even know they are there, but they are necessary for the flavor of the dressing. We love this and will use it all the time!
