Put the pork chops in a casserole dish. Sprinkle on seasoning, then onion, hominy and ortega chilies.

Reminds me of posole, without the broth. I decided it was gioing to be too hot today to run the oven for 90 minutes, so I converted this to a slow cooker recipe. Cooked on high for 4 hours, and got real tender chops. I love hominy. We had it often when I was a kid. Mom would fry it in butter. Yum. I wll do this in the oven during the winter.
