"This is one of those recipes, that I have had for many years, just waiting to be made! I made a similar recipe once but used wine, and never got around to this particular recipe, but I do think the vermouth would pair well with the pears. I think you could cut some really thin strands of the orange and lemon to incorporate with the grated rinds, and then use later for decoration."

Step by Step Method
Step 1
With the exception of the cream, place all the ingredients into a saucepan. Add sufficient water to cover the pears and bring to the boil - then simmer for 15 minutes. Remove the pan from the heat and transfer to a bowl and refrigerate for at least 12 hours.
Step 2
Drain the pears and serve them with the cream, decorate with some of the leftover fruit and a sprig of mint if desired.
