Step 1: With the exception of the cream, place all the ingredients into a saucepan. Add sufficient water to cover the pears and bring to the boil - then simmer for 15 minutes. Remove the pan from the heat and transfer to a bowl and refrigerate for at least 12 hours.
Step 2: Drain the pears and serve them with the cream, decorate with some of the leftover fruit and a sprig of mint if desired.
