Ingredients

The ingredients are:
  • 6 (540 gram) pears (large pears, peeled)
  • Lemon rind, grated (from 1 whole lemon)
  • Orange rind, grated (from 1 whole orange)
  • 1 cup vermouth (dry)
  • 1 cup caster sugar
  • 3/4 cup thickened cream (whipped)

How to Make

  • Step 1: With the exception of the cream, place all the ingredients into a saucepan. Add sufficient water to cover the pears and bring to the boil - then simmer for 15 minutes. Remove the pan from the heat and transfer to a bowl and refrigerate for at least 12 hours.

  • Step 2: Drain the pears and serve them with the cream, decorate with some of the leftover fruit and a sprig of mint if desired.
