Step by Step Method

Step 1

Preheat oven to 350°F. Coat a 9x5x3-inch loaf pan with non-stick cooking spray.

Step 2

Mix together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl.

Step 3

Add oatmeal and plums, and stir to coat the plums.

Step 4

In another bowl, combine eggs, milk and oil.

Step 5

Add to flour mixture and stir until dry ingredients are just moistened.

Step 6

Pour into prepared pan and bake 1 hour.

Step 7

Cool in pan 10 minutes; remove to rack and cool completely

I love plums so had to give this bread a try. Used 5 small plums and added a little more cinnamon and nutmeg (my favorites). More of a rustic type of bread with great texture and flavor. I toasted a couple slices the next morning to have with my coffee and it was perfect. Thank you Mikekey for sharing with us! Made and reviewed for the Billboard Recipe Tag Game. UPDATE: I have made this bread a couple times and it was delicious every time.
