  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup oats (quick-cooking)
  • 1 cup plums, pitted and diced (fresh purple plums or fresh, not dried, Italian Prunes)
  • 2 large eggs, beaten
  • 1 cup milk
  • 1/4 cup oil (canola oil)

How to Make

  • Step 1: Preheat oven to 350°F. Coat a 9x5x3-inch loaf pan with non-stick cooking spray.

  • Step 2: Mix together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl.

  • Step 3: Add oatmeal and plums, and stir to coat the plums.

  • Step 4: In another bowl, combine eggs, milk and oil.

  • Step 5: Add to flour mixture and stir until dry ingredients are just moistened.

  • Step 6: Pour into prepared pan and bake 1 hour.

  • Step 7: Cool in pan 10 minutes; remove to rack and cool completely
