Step 1: Preheat oven to 350°F. Coat a 9x5x3-inch loaf pan with non-stick cooking spray.
Step 2: Mix together flour, sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a large bowl.
Step 3: Add oatmeal and plums, and stir to coat the plums.
Step 4: In another bowl, combine eggs, milk and oil.
Step 5: Add to flour mixture and stir until dry ingredients are just moistened.
Step 6: Pour into prepared pan and bake 1 hour.
Step 7: Cool in pan 10 minutes; remove to rack and cool completely
