Step 1

In a small saucepan bring chicken broth to a boil.

Step 2

Stir in couscous, cover, and remove from heat. Let stand 5 minutes.

Step 3

Drizzle with lemon juice and fluff with a fork. Stir in lemon zest and chopped pistachios.

I had to use orange zest and orange juice as I had run out of lemons and wholemeal couscous otherwise made as per recipe and there was still some left over but interestingly according to packet directions they put this down as one serve and honestly I could have gotten 3 out of it without trouble, thank you Mikekey made for Pick Me tag game.
