Step 1

Preheat grill to medium.

Step 2

Thread sausage slices and pineapple chunks on skewers, alternating meat and fruit. Reserve leftover pineapple for another use.

Step 3

Brush skewers generously with barbecue sauce.

Step 4

Grill over indirect medium heat for 10 to 15 minutes, turning occasionally, until sausage is cooked through and the internal temperature, using a food thermometer, is 165° F, before removing from the grill.

Step 5

Serve skewers over rice or with mixed green salad.

  • 8 bamboo skewers, soaked on water for 1 hour, or metal skewers

I love Conecuh smoked sausage, so that is what I used with this recipe. I could see adding some additional veggies to the skewers in the future. We really enjoyed these for our "Day after the 4th" cookout. Thanks for sharing.
