Step by Step Method
Step 1
Heat a large heavy based non stick pot over a medium heat.
Step 2
Add bacon (speck) lardons and fry until golden, this will take 3-4 minutes.
Step 3
Then add leek and butter to the pot.
Step 4
Stir until the butter has melted and the leek is tender, around 5 minutes.
Step 5
Add peas and water and bring to a simmer.
Step 6
Add lettuce and continue to simmer until the liquid has reduced to a coating consistency and the lettuce is tender.
Step 7
Season as needed with salt and pepper, serve immediately.
