Step 1: Heat a large heavy based non stick pot over a medium heat.
Step 2: Add bacon (speck) lardons and fry until golden, this will take 3-4 minutes.
Step 3: Then add leek and butter to the pot.
Step 4: Stir until the butter has melted and the leek is tender, around 5 minutes.
Step 5: Add peas and water and bring to a simmer.
Step 6: Add lettuce and continue to simmer until the liquid has reduced to a coating consistency and the lettuce is tender.
Step 7: Season as needed with salt and pepper, serve immediately.
