Ingredients

The ingredients are:
  • 4 ounces sliced bacon (4 slices, cut into lardons, small cubes)
  • 1 leek (white part, finely sliced, can use spring onions)
  • 2 tablespoons unsalted butter
  • 16 ounces frozen peas (defrosted, baby peas)
  • 1/4 cup water
  • 1/4 cup iceberg lettuce, finely sliced
  • 1/2 teaspoons salt
  • Dash pepper

How to Make

  • Step 1: Heat a large heavy based non stick pot over a medium heat.

  • Step 2: Add bacon (speck) lardons and fry until golden, this will take 3-4 minutes.

  • Step 3: Then add leek and butter to the pot.

  • Step 4: Stir until the butter has melted and the leek is tender, around 5 minutes.

  • Step 5: Add peas and water and bring to a simmer.

  • Step 6: Add lettuce and continue to simmer until the liquid has reduced to a coating consistency and the lettuce is tender.

  • Step 7: Season as needed with salt and pepper, serve immediately.
