"This is another simple twist to add an extra something to your pork. The basil and garlic give the pork a lovely flavour. Use your favorite pesto recipe sauce. The marinating fridge time of 12 hours is not included in the posted times"

Step 1

Season the tenderloin with salt & pepper

Step 2

Rub the pesto sauce on all sides of the tenderloin.

Step 3

Wrap tightly in plastic wrap

Step 4

Place in fridge overnight or for about 12 hours

Step 5

Pre-heat oven to 375F

Step 6

Roast the pork for apprx 45 minutes or until the internal temp reaches 160f

Step 7

Let it rest for 5 minutes, slice and serve

I made this in the crock-pot over sliced potatoes. I cooked it on low for 6 hours and it turned out so good, the roast was moist and tender. The pesto flavoured up those taters nicely also. A keeper recipe.
